The hardness of water
The hardness of water refers to its concentration of mineral compounds, especially magnesium and calcium salts.
According to this concentration, the water can be “harder” or “softer”, depending on whether it has a higher or lower level of salts. In the case of tea, it is preferable to use rather soft water, since hard water can have a negative impact on the taste. 1-4 grains of hardness is ideal and 0% of chlorine.
The importance of temperature
Each type of tea requires a specific water temperature. For example, in the case of green tea, the water must be heated to a maximum of 85ºC. If it exceeds this temperature the taste and smell of tea can be affected.
