Cooking with Tea | Salmon poached in Green Tea | A match made in heaven
Our Semper Tea organic teas are very popular, but we like to think ´outside the cup´ sometimes and integrate our teas into cocktails, cakes, biscuits or delicious meals.
Today we would like to show you a flavourful, nutritious and easy recipe where you can incorporate tea into a main meal: salmon poached in green tea. Two healthy and powerful ingredients that make for a light lunch or dinner.
Before we get into the recipe, let´s talk about why green tea and salmon are so healthy and what ´poaching´ really means.

Salmon is a great source of protein, rich in omega 3’s, high in vitamin B, and provides heart and skin healthy antioxidants.
So, what happens when you combine the powerful green tea with the hearty and healthy salmon? A powerhouse of goodness!
Poaching – A gentle and healthy way of cooking
Poaching is a very gentle way of cooking.
Food is submerged in a liquid, like water, stock or wine and uses relatively low temperature (70-80° C). It is a very healthy method of cooking as it does not use fat to cook or flavour the food and preserves the structure of delicate proteins like fish, chicken or eggs.
Poaching the salmon not only ensures a moist, tender fish, but also preserves the nutrients and beneficial omega 3’s much better than any other method of preparation.
Let´s start cooking.
Recipe Green Tee and Poached Salmon – for 2 people
- 4 bags of organic Green Tea – Semper Tea
- 2 pieces of fresh salmon
- 2 cups boiling water
- 5 cloves minced garlic
- 1 tbsp freshly grated ginger
- 2-3 tbsp soya sauce
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1 tsp salt and pepper
- 1/2 lemon
Steep green tea bags in water for 2-4 minutes, remove and add garlic, ginger, soya sauce and sesame oil to tea. Heat olive oil in a pan and once hot, add the salmon pieces. If salmon still has skin on, place skin side up and sear the other side for 2-3 minutes. Turn salmon over and add tea mixture. Bring to a boil, reduce heat, cover and poach for 6-9 minutes, temperature should be 70-80°C.
You should end up with the most delicious piece of tender fish and it should flake easily. Once plated, season with a little lemon and sprinkle with salt and pepper.
Serve this dish with a bowl of fragrant basmati rice or soba noodles and for vegetables you might enjoy some asparagus and fresh spinach leaves.
